Buffalo chickpea wraps

Ingredients

  • 1 tablespoon olive oil
  • 15oz canned chickpeas
  • ½ teaspoon garlic powder
  • 1 pinch salt
  • ¼ cup buffalo sauce
  • ⅓ cup hummus
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 2 large tortillas
  • romaine lettuce
  • tomato, sliced
  • red onion, sliced

Directions

  1. In a large saucepan, heat the olive oil over medium heat
  2. Once the oil begins to shimmer, add the chickpeas and cook until lightly browned (2-3 minutes)
  3. Add the following and cook for 2 more minutes until the sauce thickens and chickpeas browned:
    1. garlic powder (1 teaspoon)
    2. salt (1 pinch)
    3. buffalo sauce (¼ cup)
  4. Set chickpeas aside
  5. In a small bowl combine and whisk thoroughly:
    1. hummus (⅓ cup)
    2. lemon juice (1 tablespoon)
    3. water (1 tablespoon)
  6. Assemble a wrap by topping tortilla with romaine, chickpeas, tomatoes, and red onion, then pour on dressing
  7. Fold in sides of the wrap and roll up like a burrito
  8. (Optional) Cut in half
