Chocolate-Mint Parfait

Ingredients

  • 2 cups cold milk
  • ¼ teaspoon peppermint extract
  • 1 package (4-serving size) JELL-O chocolate flavor instant pudding & pie filling
  • 6 drops green food coloring
  • 1 cup thawed Cool Whip whipped topping
  • Additional Cool Whip topping (Optional)

Directions

  1. Pour milk and peppermint extract into medium bowl
  • 2 cup cold milk
  • ¼ teaspoon peppermint extract
  1. Add dry pudding mix and beat with whisk for 2 minutes or until well blended. Then set aside
  • 1 package pudding mix
  1. Add food coloring to 1 cup of Cool Whip (thawed) and stir gently until well blended
  • 6 drops green food coloring
  1. Layer pudding and green whipped topping alternately in 6 parfait glasses
  2. Refrigerate at least 15 minutes before serving
  3. Top with additional Cool Whip topping if desired

Shortcut

You can substitute ¼ teaspoon almond extract or ½ teaspoon ground cinnamon for the mint extract to customize the flavor of these parfaits
