Corn salsa

Ingredients

  • 2 ears of corn
  • oil
  • (optional) 1 poblano pepper
  • 1 shallot
  • fresh parsley
  • half a lime
  • salt

Directions

  1. Give each ear of corn a light coating of oil and roast
  2. Slightly char the poblano pepper
  3. Remove the charred skin from the poblano and dice the pepper up
  4. Cut the corn from the cob
  5. Dice the shallot
  6. Chop the fresh parsley
  7. Combine all ingredients in a container and shake together
