Ingredients
- 2 ears of corn
- oil
- (optional) 1 poblano pepper
- 1 shallot
- fresh parsley
- half a lime
- salt
Directions
- Give each ear of corn a light coating of oil and roast
- Slightly char the poblano pepper
- Remove the charred skin from the poblano and dice the pepper up
- Cut the corn from the cob
- Dice the shallot
- Chop the fresh parsley
- Combine all ingredients in a container and shake together
