Ingredients
- 1 cup water
- 1 cup white sugar
- 1 cup lime juice
- 1 tablespoon lime zest
- 2 cups honeydew, diced
Directions
- Mix the water, sugar, 1/2 cup lime juice, and lime zest in a pot over medium heat
- 1 cup water

- 1/2 cup lime juice
- 1 tablespoon lime zest
- When the sugar has dissolved simmer for 30 minutes to create a simple syrup
- Pour the syrup through a strainer and remove the excess liquid
- Let this cool to room temperature
- In a blender combine the syrup, honeydew and remaining lime juice
- 2 cup honeydew
- 1/2 cup lime juice
- Blend until well combined
- Pour into an 8x8 baking dish and freeze for 12 hours or more

You can swap the honeydew for any fruit that would pair well with lime
