Honeydew lime sorbet

Ingredients

  • 1 cup water
  • 1 cup white sugar
  • 1 cup lime juice
  • 1 tablespoon lime zest
  • 2 cups honeydew, diced

Directions

  1. Mix the water, sugar, 1/2 cup lime juice, and lime zest in a pot over medium heat
    • 1 cup water

  2. When the sugar has dissolved simmer for 30 minutes to create a simple syrup
  3. Pour the syrup through a strainer and remove the excess liquid
  4. Let this cool to room temperature
  5. In a blender combine the syrup, honeydew and remaining lime juice
    • 2 cup honeydew
    • 1/2 cup lime juice
  6. Blend until well combined
  7. Pour into an 8x8 baking dish and freeze for 12 hours or more

Notes

You can swap the honeydew for any fruit that would pair well with lime
