Ingredients
- 1 cup flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 tablespoons oil
- 1 tablespoon agave nectar
- 1 cup dairy free milk
- (Optional) chocolate chips
Directions
- Pre-heat oven to 350°F
- Combine dry ingredients in mixing bowl
- flour (1 cup)
- baking powder (2 tablespoons)
- salt (1 teaspoon)
- Make a well in the center of the dry ingredients
- Add wet ingredients into the well
- oil (2 tablespoons)
- agave nectar (1 tablespoon)
- dairy free milk (1 cup)
- Carefully combine wet and dry ingredients, making sure to get flour from the sides of the bowl without over mixing
- Grease mini muffin tin or add mini cupcake liners
- Fill each mini muffin tin spot 75% of the way to the top with pancake batter
- Bake for 14-16 minutes or until just starting to turn golden on top
