JELL-O Rocket Pops

Ingredients

  • 1 package (4-serving size) JELL-O cherry flavor gelatin
  • 1 cup white sugar, divided
  • 2 cups boiling water, divided
  • ice cubes
  • 2 cups cold water, divided
  • 1 package (4-serving size) JELL-O berry blue flavor gelatin
  • 1 tub (8 ounces) Cool Whip whipped topping, thawed

Other needed Tools

  • 16 paper or plastic cups (5-ounces each)
  • 16 popsicle sticks

Directions

  1. Combine dry cherry gelatin mix and ½ cup of the white sugar in a medium bowl
  2. Add 1 cup of the boiling water and stir for at least 2 minutes until the gelatin is completely dissolved
  3. Add enough ice cubes to 1 cup of the cold water to measure 2 cups and add this to the gelatin and stir until the ice is completely melted
  4. Pour this evenly into 16 paper or plastic cups, adding about ¼ cup of the gelatin to each cup. Then freeze these for 1 hour
  5. While that layer is freezing, combine dry blue gelatin mix and ½ cup of white sugar in a medium bowl
  6. Add 1 cup boiling water and stir for at least 2 minutes until gelatin is completely dissolved
  7. Add enough ice cubes to 1 cup of the cold water to measure 2 cups and add this to the blue gelatin and stir until the ice is completely melted
  8. Refrigerate the blue gelatin for 1 hour
  9. Spoon about 3 tablespoons of Cool Whip over the cherry gelatin in each cup
  10. Top evenly with the blue gelatin, adding about ¼ cup of the gelatin to each cup
  11. Freeze the cups for 1 hour or until almost firm.
  12. Insert wooden pop stick or plastic spoon into center of each cup for handle
  13. Freeze for an additional 4 hours or overnight

Notes

To remove pops from cups, place bottoms of cups under warm running water for 15 seconds. Press firmly on bottoms of cups to release pops. DO NOT twist or pull popsicle sticks as they will come out!

Store leftover pops in the freezer
