Sloppy joes

Ingredients

  • 1 large onion
  • 4 stalks celery
  • 1 green bell pepper
  • 1 tablespoon canola oil
  • 12 oz tomato paste
  • 1 cup ketchup
  • 2 tablespoons prepared yellow mustard
  • 2 tablespoons firmly packed brown sugar
  • 2 cups textured vegetable protein
  • 4 cups water
  • salt & pepper
  • 12 hamburger buns

Directions

  1. Cut onion into ¼-inch pieces
  2. Cut celery into ¼-inch pieces
  3. Cut bell pepper into ¼ pieces
  4. Add oil in a large skillet over medium heat
  5. Cook 10-12 minutes (or until onion is translucent), stir frequently:
    1. Onion
    2. Celery
    3. Bell pepper
  6. Stir in the following and cook for 5 minutes:
    1. Tomato paste (12 oz)
    2. Ketchup (1 cup)
    3. Mustard (2 tablespoons)
    4. Brown sugar (2 tablespoons)
  7. Add textured protein (2 cups) and water (4 cups) and stir well
  8. Cook over medium heat for 10-12 minutes or until water is completely absorbed
  9. Season with salt and pepper
