Spinach Crackers

Ingredients

  • 1 2/3 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sesame seeds
  • 1 tablespoon olive oil
  • ½ cup water
  • 2 loosely packed cups of fresh spinach

Directions

  1. Preheat the oven to 400°F
  2. Wash the spinach and put in a blender with the water and blend until smooth

    • ½ cup water
  3. Mix together the all-purpose flour, baking powder, salt and sesame seeds
    • 1 2/3 cup all-purpose flour
    • 1 ½ teaspoons baking powder
    • 1 teaspoon salt
    • 1 tablespoon white sesame seeds
  4. Once mixed add in the spinach/water mixture and olive oil and mix until you create a dough. If the dough seems to sticky add more flour 1 tablespoon at a time
    • 1 tablespoon olive oil
  5. Flour a baking mat and roll the dough out evenly until thin
  6. Cut lengthwise and widthwise with a pizza cutter the size you would like your crackers
  7. Bake in the oven for 15-20 minutes or until they crispy
