Stuffed shells

Ingredients

  • 12 oz jumbo shell pasta
  • 2 eggs
  • 32 oz ricotta cheese
  • 1 cup grated parmesan cheese
  • 1 teaspoon italian seasoning
  • 26 oz prepared spaghetti sauce
  • 2 cups grated mozzarella cheese
  • 9x13 inch baking pan

Directions

  1. Preheat oven to 350°F
  2. Bring large pot of water to boil and add shells. Cook shells until al dente (about 12 minutes)
  3. Drain noodles in a colander
  4. Meanwhile, 2 eggs in a bowl lightly.
  5. Add the following to the bowl with eggs and stir until combined:
    1. ricotta cheese (32 oz)
    2. parmesan cheese (1 cup)
    3. italian seasoning (1 teaspoon)
  6. Spoon some of the filling created in the last step into each cooked pasta shell. Add the shells in a single layer to the baking pan
  7. Spread spaghetti sauce over the shells
  8. Sprinkle mozzarella cheese over the shells
  9. Bake for 30 to 40 minutes or until the cheese is melted and beginning to brown
